Job Description
· Develop budget to determine cost of food, ingredients, alcohol, kitchen and cleaning supplies
· Modify menu prices according to the restaurant budget
· Understanding of brewery / distillery functions, bottling, canning, excise tax filings
· Understand brewery / distillery production rules and legislation
· Ability to Promote Brewery and Distillery products for off sales.
· Monitor revenues to determine labour cost
· Plan and organize daily operations
· Plan and organize events including DJ nights, bands and other entertainment.
· Set staff work schedules
· Balance cash and complete balance sheets, cash reports and related forms
· Enforce provincial/territorial liquor legislation and regulations
· Organize and maintain inventory
· Negotiate arrangements with suppliers
· Negotiate with clients for catering or use of facilities
· Provide customer service
· Train staff
