Job duties: - Prepare, cook, and present Yakitori dishes such as Hatsu, Tsukune, Tebasaki, Harami, Butabara, Ebi, and Unagi; - Prepare, cook, and present Japanese tapas dishes such as Agedashi Tofu, Nankotsu Karaage, and Aburis Shimesaba; - Plan menus and determine size of food portions and presentation of food; - Maintain inventory and records of food, supplies and equipment; - Estimate food requirements and costs; - Order supplies and equipment; - Train kitchen staff in preparation, cooking and handling of food; - Clean and inspect kitchen and work areas.
